Mixed Seafood Stew
Prepare a seafood delight with fresh shrimps and scallops with this simple stew recipe. First slow cook the curry using crushed tomatoes and tomato paste then add seafood to the mixture.
Serves: 4
Prep Time: 10 minutes
Cooking Time: 30 minutes
Ingredients
• 1 can (28 oz.) crushed tomatoes
• 1 Tablespoon tomato paste
• 4 cups vegetable broth
• 3 garlic cloves, minced
• 1/2 cup chopped white onion
• 1 teaspoon dried thyme
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1/2 teaspoon celery salt
• 1/4 teaspoon crushed red pepper flakes
• 1/8 teaspoon cayenne pepper
• salt and pepper to taste
• 2 pounds seafood (1 pound large shrimp and 1 pound scallops)
• a handful of chopped parsley
Instruction:
1. Add everything to a saucepan except seafood and parsley.
2. Cover saucy mixture with a lid and cook for 15 minutes.
3. Once done, remove the lid and add the seafood to the mixture.
4. Cook for 15 minutes until seafood is al dente.
5. Garnish with parsley and serve.
